Grilled Hawaiian Ham Kabobs 

Ingredients:

1-lb. ham, cut into 1-inch cubes

1 20-oz. can pineapple chunks, drained

1 red onion, cut into 1-inch pieces

2 tbsp. brown sugar

2 tbsp. apple cider vinegar

1 tbsp. vegetable oil

½ tsp. ground ginger

8 bamboo skewers (soaked in water for 30 minutes)

Instructions:

1) Preheat grill to medium heat.

2) In a large bowl, combine ham cubes, pineapple chunks, and red onion pieces.

3) In a small bowl, whisk together brown sugar, apple cider vinegar, vegetable oil, and ground ginger. Pour this mixture over the ham and fruit in the large bowl, and stir to coat evenly.

4) Thread the ham and fruit onto the soaked bamboo skewers. Grill for 10 minutes or until everything is heated through and slightly charred around the edges.

Serve immediately with your favorite dipping sauce. 

Pineapple Upside Down Cupcakes 

Ingredients:

1 18.25-ounce box yellow cake mix

1/2 cup butter, melted

1 20-ounce can pineapple slices in juice, drained (reserve 3 tablespoons juice)

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

6 maraschino cherries 

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9×13 inch baking pan.

2. In a small bowl, combine the cake mix, melted butter, 3 tablespoons pineapple juice, brown sugar, and vanilla extract. Mix well.

Pour into prepared pan. Arrange the pineapple slices on top of the batter. Place a cherry in the center of each slice.

3. Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool cake before serving

Creamy Pineapple Coconut Popsicles

Popsicle mold s(I used this one) icesicle sticks (these are my favorite)  or wooden chopsticks

Optional: 1/4 cup of rum (for an adult version)
